Homemade Bell Pepper Pesto

Ingredients:

  • 2 large red or yellow bell peppers (seeded and roughly chopped)
  • 1 cup fresh basil leaves
  • 2 garlic cloves
  • 1/3 cup nuts (pine nuts, almonds, or cashews work well)
  • 1/3 cup extra virgin olive oil
  • 2 tbsp nutritional yeast or Parmesan cheese (optional)
  • Salt & pepper to taste
  • Juice of  lemon

Instructions:

  1. Roast (Optional): For a smoky flavor, roast the bell peppers in the oven at 400 F (200 C) for about 20 minutes until the skin blisters; peel off the charred skin once cooled.
  2. Blend: In a food processor, combine bell peppers, basil, garlic, and nuts. Pulse until coarsely chopped.
  3. Emulsify: Add olive oil and lemon juice gradually while processing until smooth. Mix in nutritional yeast (if using), salt, and pepper.
  4. Store: Pour the pesto into an airtight container. It will keep in the refrigerator for up to 1 week.
