Amaranth Ki Roti Recipe Rajgira Roti

Amaranth ki roti, also known as Rajgira Roti, is a gluten-free, nutrient-rich Indian flatbread made from amaranth flour. It is a great alternative to regular wheat roti, especially for those looking for a wholesome, high-protein, and fiber-rich option.

Ingredients:

  • 1 cup amaranth (rajgira) flour
  • 1 small boiled potato (mashed, helps bind the dough)
  • 1 2 tbsp warm water (as needed for kneading)
  •   tsp rock salt (or to taste)
  •   tsp cumin seeds (optional, for flavor)
  • 1 tsp ghee (for cooking)

Instructions:

  1.  Prepare the Dough: In a mixing bowl, combine amaranth flour, mashed potato, salt, and cumin seeds. Mix well.
  2. Gradually add warm water, little by little, kneading gently until a soft, pliable dough forms. Amaranth flour lacks gluten, so the dough will be more delicate than wheat flour dough.
  3. . Cover and let it rest for 10 minutes.
  4. Roll the Roti: Take a small portion of the dough and roll it between parchment paper or a greased surface to avoid breaking. If rolling is difficult, flatten with your hands.
  5. Cook the Roti: Heat a tawa (griddle) on medium heat. Place the rolled roti on it and cook for 1-2 minutes until bubbles appear. Flip and cook the other side, pressing gently with a spatula. Brush with ghee for extra flavor.
  6. Serve hot with fresh yogurt, chutney, or any vegetable curry.
