Homemade Basil Paste

Ingredients:

  • 2 cups fresh basil leaves (packed)
  • 2 garlic cloves
  •  cup extra virgin olive oil
  • 2 tbsp pine nuts (or walnuts for a more economical option)
  • 2 tbsp nutritional yeast or grated Parmesan (optional, for a cheesy flavor)
  • Salt & pepper to taste
  • Juice of  lemon (optional for brightness)

Instructions:

  1. Prep: Rinse basil leaves and pat dry.
  2. Blend: In a food processor or high-speed blender, combine basil, garlic, pine nuts, nutritional yeast (if using), salt, and pepper. Pulse until roughly chopped.
  3. Emulsify: Slowly drizzle in olive oil and lemon juice while processing until the mixture becomes a smooth paste.
  4. Store: Transfer to a clean jar. Cover the top with a thin layer of olive oil and refrigerate for up to one week.
