- 10-12 dried red chillies (adjust based on spice preference)
- 3 garlic cloves
- 1 small tomato (optional, for a slightly milder and sweeter note)
- 2 tbsp olive oil
- 1 tsp salt (or to taste)
- tsp sugar (optional, to balance acidity)
Instructions:
- Soak: Remove stems and soak dried red chillies in warm water for about 20-30 minutes until they soften.
- Blend: Drain the chillies and place them in a blender along with garlic, tomato (if using), salt, and sugar. Blend to a smooth consistency, adding olive oil gradually to emulsify.
- Adjust: Taste and adjust seasoning if needed.
- Store: Transfer to a sterilized jar and refrigerate. Use within 1-2 weeks.
