Mushroom Tempeh Curry Recipe

Ingredients:

For the Curry Base:

  • 1 cup tempeh (cubed)
  • 1 cup mushrooms (sliced, use button, cremini, or shiitake)
  • 1 onion (finely chopped
  • 2 tomatoes (pureed or finely chopped)
  • 1 tbsp ginger-garlic paste
  • 1 green chili (optional, for heat)
  • cup coconut milk (for creaminess)
  • 1 cup vegetable broth or water
  • 2 tbsp coconut oil or ghee

Spices & Seasoning:

tsp turmeric powder

  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • tsp red chili powder (optional)
  • Salt to taste
  • Fresh cilantro (for garnish)
  • Juice of  lemon (for freshness)

Instructions:

1. Prepare the Tempeh & Mushrooms:

  • Lightly pan-fry tempeh cubes in 1 tbsp oil until golden brown. Set aside.
  • Saut  mushrooms in the same pan until they release water and turn soft. Set aside.

2. Make the Curry Base:

  • Heat 1 tbsp oil in a pan, add cumin seeds, and let them splutter.
  • Add chopped onions and saut until golden brown.
  • Stir in ginger-garlic paste and cook for another minute.
  • Add tomatoes, turmeric, coriander powder, and chili powder. Cook until oil separates.

3. Cook the Curry:

  • Add the cooked tempeh and mushrooms to the curry base. Stir well.
  • Pour in coconut milk and vegetable broth. Let it simmer for 10 minutes.
  • Add garam masala and adjust salt as needed.

4. Finish & Serve:

  • Turn off the heat, squeeze in fresh lemon juice, and garnish with cilantro.
  • Serve hot with brown rice, quinoa, or millet roti for a nourishing meal.
