Ingredients:
  • 2 cups pumpkin (peeled and cubed)
  • 1 cup coconut milk
  • 1 onion (finely chopped)
  • 2 tomatoes (chopped or pureed)
  • 1 tbsp ginger-garlic paste
  • 1 green chili (optional, for heat)
  • 1 cup vegetable broth or water
  • 2 tbsp coconut oil or ghee

Spices & Seasoning:

  •  tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  •  tsp cinnamon powder (optional, for warmth)
  • 1 tsp garam masala
  •  tsp red chili powder (adjust to taste)
  • Salt to taste
  • Juice of  lemon (for freshness)
  • Fresh cilantro or curry leaves (for garnish)

Instructions:

1. Prepare the Pumpkin
  • Heat 1 tbsp coconut oil in a pan and saut pumpkin cubes for 5 minutes until slightly golden. Set aside.

2. Make the Curry Base

  • In the same pan, heat another tbsp of oil. Add cumin seeds and let them splutter.
  • Add chopped onions and saut  until golden brown.
  • Stir in ginger-garlic paste and cook for a minute until fragrant.
  • Add tomatoes, turmeric, coriander powder, cinnamon, and chili powder. Cook until the oil separates.

3. Cook the Curry

  • Add the sauted pumpkin to the pan and mix well.
  • Pour in coconut milk and vegetable broth. Let it simmer for 10-15 minutes until the pumpkin is soft and the flavors meld together.
  • Stir in garam masala and adjust salt as needed.

4. Finish & Serve

  • Turn off the heat, squeeze in fresh lemon juice, and garnish with cilantro or curry leaves.
  • Serve hot with brown rice, quinoa, or millet flatbread for a wholesome meal.
